Gardenia Rosales’ passion for coffee started as a youth when a vivacious, little seven year old would wake up in the morning to help her dad brew coffee for the family. She has dedicated her life to trying specialty coffees around her hometown of Los Angeles and any places she traveled. Founding Cipota Coffee is a personal endeavor near and dear to her heart. Her Salvadoran parents shared with her the warmth & love of Central American coffee. Cipota is slang for 'girl' in El Salvador. It's an endearing term—so much in fact, she was called it daily as her parents shouted for cafecitos and pan dulces!

Specialty coffee, like that offered by Cipota Coffee, is crafted with great care by many dedicated individuals, all striving for the highest quality. Coffee producers meticulously grow the beans, considering weather conditions, the right terroir, climate, and specific care techniques. Cipota Coffee then selects the finest beans, which are expertly roasted by partners like YezPlz to enhance the unique flavors of each variety. Baristas skillfully brew the coffee to achieve a perfect balance of acidity, sweetness, and bitterness. Ultimately, consumers enjoy and choose specialty coffee, supporting everyone involved in its creation.

Rafael Silva, head of the Sicafe farm collective, which includes Finca La Siberia, Finca San Cayetano, Finca Llano Grande, and Finca La Fany. Rafael leads with passion and dedication, ensuring the production of exceptional coffee year after year. As the sixth-generation leader, Rafael has won multiple Cup of Excellence Awards, reflecting his commitment to excellence in specialty coffee. We are proud to provide his coffees as part of our selections.
Finca Los Pirineos
Finca Los Pirineos in the Tecapa-Chinameca region, is a source of our coffees. Led by kind-hearted producer Diego Baraona, this farm grows various coffees including Antique Prestigious Arabicas, Elite Bourbons, and Pacamaras. Emphasizing environmental & social sustainability, the farm uses only rainwater for production and processing and supports the local community with sustainable work opportunities and additional support beyond their work roles.

Our love for coffee was deeply rooted in the fond memories shared with family. However, our expertise in green coffee and brewing was shaped by the incredible professionals at Academia Barista Pro. Their guidance and knowledge have transformed our passion into a craft.
Academia Barista Pro offers comprehensive coffee education and training, including SCA certifications in various coffee-related skills. They provide courses on barista techniques, latte art, roasting, brewing methods, and more, aimed at both beginners and professionals.
